The Victory Boulevard sushi counter.
A counter-style sushi shop on Victory Boulevard in Glendale. Edomae nigiri made one piece at a time, sashimi cut to order, a short rotating special list driven by what came in that morning. Reservations recommended for the bar.
The Counter. Itamae. Patience.
Sushi Nishi Ya is a small counter on Victory Boulevard in Glendale. Twelve seats at the bar, four tables, one itamae. The fish comes in fresh, the rice is seasoned twenty minutes before service, the wasabi is grated when you order omakase.
We do classic Edomae nigiri — bluefin tuna, salmon, yellowtail, sea bream, mackerel, sweet shrimp, eel, scallop. The omakase is twelve pieces, chef's selection, paced through the meal. Sashimi plates and a short list of cooked dishes round out the menu.
Open six days a week. Closed Monday. Reservations strongly recommended for the bar. The 115 reviews come from regulars who eat omakase here on date night and special occasions.
The regulars.
Sushi Nishi Ya is the only sushi counter I trust in Glendale. The itamae actually pays attention to which piece goes when — soft fish first, fattier as you go, eel at the end. The rice is the right temperature. I sit at the bar every other Friday.
Took my wife for our anniversary — twelve-piece omakase, four pieces sashimi, hot sake, two hours at the bar. The bluefin otoro was the best piece of fish I've eaten in LA in five years. The chef was generous with explanation. We're regulars now.
Walk in solo any Thursday for the eight-piece set and a small bottle of sake. The same itamae, the same seat, the same uni when it's in. This is a counter-sushi shop, not a roll-shop, and it shows.
Come sit at the counter.
